01 - In a large skillet over medium heat, cook ground beef, breaking it apart with a wooden spoon, until browned. Drain off any excess fat.
02 - Stir in taco seasoning and water. Simmer mixture for 2-3 minutes until thickened. Remove skillet from heat and allow beef to cool slightly.
03 - In a large salad bowl, combine chopped romaine lettuce, cherry tomatoes, diced red onion, black beans, corn, and shredded cheddar cheese.
04 - Add the slightly cooled taco beef to the salad bowl.
05 - Just before serving, add crushed Doritos chips and your choice of ranch or Catalina dressing. Gently toss until all ingredients are evenly coated.
06 - Serve immediately to ensure the Doritos remain crunchy.
