# What You Need:

→ Cookie Dough

01 - 1 3/4 cups gluten-free all-purpose flour blend
02 - 1/3 cup almond flour
03 - 2 Earl Grey tea bags or 2 teaspoons loose leaf tea
04 - 1/2 teaspoon baking powder
05 - 1/4 teaspoon fine sea salt
06 - 1/2 cup organic granulated sugar
07 - 1/2 cup vegan butter, softened
08 - 2 tablespoons unsweetened plant milk
09 - 1 tablespoon maple syrup
10 - 1 teaspoon pure vanilla extract

→ Stained Glass Centers

11 - 1/2 cup vegan hard candies, various colors, crushed
12 - Edible dried flowers (rose petals, cornflower, violets, lavender)

# Directions:

01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - Open Earl Grey tea bags and finely grind contents if using loose leaves.
03 - Whisk together gluten-free flour, almond flour, ground Earl Grey tea, baking powder, and salt in a medium bowl.
04 - Cream vegan butter and sugar until fluffy in a large bowl. Add plant milk, maple syrup, and vanilla extract, mixing well.
05 - Gradually add dry ingredients to wet, mixing until soft dough forms. Chill for 15 minutes if too sticky.
06 - Lightly flour surface with gluten-free flour. Roll dough to 1/4 inch thickness.
07 - Use large cookie cutter for outer shape and small cutter to create window in center. Transfer to prepared trays.
08 - Fill cut-out centers with 1 to 2 teaspoons crushed candy. Sprinkle with edible flowers, pressing gently to adhere.
09 - Bake for 9 to 11 minutes until edges are golden and candy centers have melted completely.
10 - Allow cookies to cool fully on tray before transferring. The stained glass centers will harden as they cool.

# Expert Suggestions:

01 -
  • The combination of floral Earl Grey and colorful candy centers creates cookies that look almost too pretty to eat
  • They're naturally vegan and gluten-free without compromising on the delicate, buttery texture we all crave
02 -
  • The candy centers remain extremely hot even after the cookie edges have cooled, so resist the urge to touch or taste too soon
  • Overfilling the windows with candy causes them to overflow and create thin jagged edges instead of smooth glass-like centers
03 -
  • Place cookies on the baking sheet with at least two inches between them, as the candy can spread if accidentally overfilled
  • If you only have larger candy pieces, break them down further before filling the windows to ensure smooth melting
