01 - Combine the goat cheese and cream cheese in a small bowl. Mix thoroughly until completely smooth and spreadable.
02 - Spread the cheese mixture evenly onto two bread slices. Drizzle 1 tbsp honey over each slice. Add fresh herbs and greens if desired. Top with remaining bread slices to form sandwiches.
03 - Spread softened butter generously on the exterior sides of both sandwiches.
04 - Heat a skillet or griddle over medium heat. Place sandwiches butter-side down. Cook for 3-4 minutes until golden brown and crispy.
05 - Flip sandwiches carefully. Press gently with spatula and cook another 3-4 minutes until golden brown and cheese is melted.
06 - Remove from heat, slice diagonally, and serve immediately while warm and crisp.
